Enter the amount of each purchase unit allocated to one recipe batch. Cost per unit must use that same unit. Usable amount is a preparation-yield reference and is not a unit conversion.

Run the full tested process at the intended batch size. Weigh or count finished output at the same point each time and record portions separately.
Why one yield test is not enough
A single test can be distorted by scale error, operator technique, equipment load, trim, cook loss, cooling, or portioning. Repeat the same approved method until the result is stable enough for production planning and costing.
When the average tested yield differs from the target, either correct the method or approve a new target. Do not keep a target that the normal process does not produce.
Version control protects more than food cost
A supplier, formulation, portion, pan, cooking process, holding method, or garnish change can affect cost, yield, allergens, quality, and safety at the same time.
Issue a new version only after the impacted records are reviewed and the team receives the current method.
