Prep items
Forecast need is the item quantity expected for service before the buffer. Usable on hand should include only product that passed your date, quality, temperature, labeling, and carryover checks.
How the prep quantity is calculated
Target quantity equals forecast need multiplied by one plus the planning buffer.
Quantity to prep equals target quantity minus safe usable on-hand stock, with a minimum of zero.
Whole batches rounds the quantity to prep up to the next complete recipe batch. The projected overage shows the extra output created by that rounding.
The guest or order forecast is context only. Enter the item-level forecast need from current sales mix, confirmed orders, portions, and recipe yield.
Use the sheet as a control, not a guess
Count carryover before production and exclude anything that cannot be safely or consistently served. A written quantity is not evidence that stock is usable.
Set buffers by item. A single site-wide percentage is a starting scenario, but expensive, fragile, short-life, or slow-moving products may need a lower limit.
After service, record actual output, sales, remaining stock, and waste. That feedback is what turns tomorrow's prep sheet into a better forecast.
